Garlic Roasting Directions

Serving Size: 6
2 whole garlic bulbs -- (not cloves)
2 tablespoons olive oil salt and pepper -- to taste
1/2 teaspoon dried basil 1.

Soak top and bottom of garlic roaster in water for at least 15 minutes. Remove some of the outer papery covering (but not all) from garlic bulbs. Cut about 1/2-inch off top of whole bulbs so garlic is exposed and can be extracted easily. Pour 1 tablespoon oil over each bulb. Sprinkle with salt and pepper. Sprinkle with dried basil or other herb of choice. 2. Set bulbs cut side up in garlic cooker, cover and place in a cold oven. Set temperature to 350 degrees and bake for at least 1 hour or until garlic is easily squeezed out of cloves.

NOTES: If a richer looking, browner bulb is desired, remove the lid at the end of the cooking time and brush more oil on the bulb and bake for an additional 15 minutes. Reference: www.cookingwithshirley.com/cooking_in_clay_pots.htm
